  • 60 g suar
  • 80 g walnut kernels
  • 2 egg (s), size M
  • 3 tablespoon maple syrup
  • 400 ml whipped cream
  • 2 orange (s)

Anne`s Christmas Menu – Dessert – Walnut Parfait

Instructions

  1. 1. Caramelize 40 g sugar until light brown. Quickly stir in walnuts with a wooden spoon.
  2. 2. Place on a baking tray lined with baking paper, allow to cool and roughly chop.
  3. 3. Mix the eggs with 2 tablespoons of maple syrup and 20 g of sugar. Beat with the whisk of the hand mixer over the hot water bath for 8 minutes until creamy and thick.
  4. 4. Beat the mixture in a bowl with ice water until cold.
  5. 5. Add ¾ of the caramelized walnuts.
  6. 6. Whip the cream until stiff and fold into the egg mixture.
  7. 7. Pour the parfait mixture into a mold (800 ml) lined with cling film. Min. Freeze for 10 hours.
  8. 8. Peel the oranges so that the white skin is also removed. Halve oranges and cut into slices.
  9. 9. Let the parfait thaw a little. Cut into slices and serve with the remaining walnuts, 1 tablespoon maple syrup and orange slices and serve.
