Ingredients

  • 1.15 kg sugar
  • 1 pack Gelfix :
  • 100 g lemon juice, freshly squeezed
  • Weighed 1 kg apples, peeled and cleaned
  • 1 tonka bean, approx. 2 g

Instructions

  1. First put a small plate in the refrigerator for the gelling test.
  2. Put the lemon juice in a bowl. Peel the apples, cut them into small pieces and add them to the bowl with the lemon juice so that the apples do not turn brown.
  3. Mix the Gelfix with 150 g sugar in a saucepan and add the chopped apples. Cook everything over low heat for 5 minutes until soft. In the meantime, grate the tonka bean finely on a grater and add to the apples. (For me, a tonka bean weighed 2 g.) If you like, you can puree the apple mixture now.
  4. Add 1 kg of sugar and let it simmer for 4 minutes. Make a gel test on the cold plate.
  5. When the mass is solid, pour it directly into hot jars and close them. Turn the glasses upside down for 10 minutes.
  6. I got 7 glasses of 212 ml each.
  7. The taste of a tonka bean can be classified between bitter almond and vanilla.
  8. Tip: Instead of Gelfix and sugar, you can also use the corresponding amount of preserving sugar 1: 1.
