Ingredients

  • 2 apples, red
  • 25 g raisins
  • 150 grams sugar
  • 3 tablespoons water
  • 3 cl amaretto
  • 2 egg (s)
  • 80 g butter, melted
  • 1 teaspoon vanilla paste
  • 1 teaspoon cinnamon
  • 75 g wheat flour type 405
  • 30 g almonds, round
  • 0.5 teaspoon ½ baking powder
  • 1 lemon (s), including the peel
  • 30 ml heavy cream
  • powdered sugar

Instructions

  1. Whisk the eggs together with 100 g sugar in a mixing bowl. Fold in the cinnamon and vanilla paste with a whisk. Sift in the flour, ground almonds and baking powder. Add the melted butter. Set the dough aside.
  2. Quarter, core and dice the apples.
  3. Put the remaining 50 g sugar with the water in a non-stick pan and bring to a simmer over medium heat. Stir occasionally. As soon as the water has evaporated and the sugar starts to caramelize, add the apple cubes. Roast for 2 - 3 minutes and then add the raisins and amaretto.
  4. Pour the batter onto the apple layer in the pan and cook with a lid over low heat for 10 minutes. Remove the lid and bake the apple pie on the stove for another 20 minutes.
  5. Meanwhile, whip the cream and rub the lemon zest into it.
  6. Use a wooden stick to check whether the dough is cooked through and turn the finished tart out onto a plate. Garnish with the cream and, if you like, with powdered sugar.
