Azu in Tatar (in a Pan)

Azu is a national dish of Tatar cuisine. Tender beef stewed in a pan in a sour cream sauce is an ideal meat dish that goes well with almost any side dish. Easy to prepare, but very satisfying, with a very bright, rich taste. Available for cooking both outdoors and in the kitchen.

Cook: 50 minutes
Servings: 5

Ingredients

  • Food (for 6 servings)
  • Beef (pulp) – 700 g
  • Sour cream – 4 tbsp
  • Tkemali sauce – 3 tbsp
  • Butter – 1 tbsp
  • Processed cheese – 1 pc. (90-100 g)
  • Meat broth – 500 ml
  • or a bouillon cube – 1 pc.
  • Pickled cucumbers – 3 pcs.
  • Greens (parsley) – 0.5 bunch
  • Salt to taste

Directions

  1. Cut the cucumbers into small pieces.
  2. Cut the meat into strips, approximately the same as for beef stroganoff.
  3. Mix sour cream with tkemali sauce.
  4. Melt the butter in a preheated pan.
  5. Put the meat in the pan and fry for a few minutes, stirring occasionally.
  6. Add sour cream sauce, mix.
    Reduce heat to low, cover the pan with a lid, and simmer the meat for 15 minutes.
  7. So that the meat is stewed, and not fried, periodically add broth to the pan.
  8. Cut the processed cheese into small pieces and finely chop the herbs.
  9. Add cheese and pickles. Salt very gently, quite a bit, mix. You can add a little broth, cover, and leave the beef basics for another 10-15 minutes.
  10. Azu in Tatar is ready. Serve with any side dish, such as boiled rice.
