Azu in Tatar

Azu is a classic Tatar dish with roots in ancient Persia. The main ingredients of azu are slices of meat (lamb, beef, or horse meat) and stewed vegetables: pickles, tomatoes. Nowadays there is no special rigor in the recipe for the basics – you can use almost any product: potatoes, carrots, onions, etc. Pork is not allowed only in the Tatar basics.

Ingredients

  • Beef pulp – 750 g
  • Tomatoes – 4 pcs.
  • Pickled cucumbers – 3 pcs.
  • Bulb onions – 1 pc.
  • Tomato paste – 1.5 tbsp
  • Bay leaf
  • Vegetable oil – 3 tbsp
  • Salt
  • Ground black pepper

Directions

From these products, you can cook the basics in Tatar style.

  1. Wash and dry the meat with napkins. Cut the meat into small rectangular pieces and fry in a pan for 2 tbsp of oil. Transfer the meat to a saucepan.
  2. Cut the onion into slices and fry in 1 tbsp of oil. Add to the stewpan for the meat. Add water to the saucepan so that it only covers the meat and onions.
  3. Scald the tomatoes and peel them off. Cut the tomatoes into small cubes and place on top of the meat in a saucepan. Season with salt and pepper. Cover the saucepan with a lid and put on moderate heat. Simmer for 40 minutes.
  4. Cut the cucumbers into small cubes. Toss them with tomato paste and add to a saucepan. Add bay leaves. Cover and simmer for another 20 minutes.
    They usually serve azu with boiled potatoes.
