Azu with Gherkins

Azu, a meat dish prepared according to the recipe of Tatar chefs, will be very useful for a lunch meal. The main ingredient is a solid piece of beef, and we will replace the pickles needed for the recipe with gherkins.

Ingredients

  • Beef (pulp) – 400 g
  • Potatoes – 4-6 pcs.
  • Bulb onions – 1-2 pcs.
  • Gherkins (salted, pickled) – 5-7 pcs.
  • Carrots (optional) – 1 pc.
  • Tomato juice – 1 glass
  • Garlic – 2-3 cloves
  • Ground black pepper – 2 pinches
  • Turmeric – 1 pinch
  • Salt to taste
  • Vegetable oil – for frying

Directions

  1. We prepare products for the basics.
  2. We take out the gherkins from the jar.
  3. We wash the beef well under cold water, and then, armed with a sharp knife, cut the meat into large strips.
  4. We send the chopped beef for frying in a preheated pan with butter. The chunks of beef should be juiced. Fry the meat under the lid.
  5. In parallel, we will deal with onions. We clean Cut it after peeling the husk into half rings. Add the onion slices to the beef in the pan. Fry both ingredients for 6 minutes.
  6. Additionally, you can add chopped carrots (this product is optional).
  7. While the beef is roasting with the vegetables, cut the gherkins into slices. We also add them to the pan.
  8. Then add chopped garlic.
  9. Pour in tomato juice, add spices. We simmer the contents under the lid for 10 minutes.
  10. We continue to stew the beef in the pan – transfer the contents of the pan to the pan and fill it with water.
  11. While the meat and vegetables are stewed, cut the potatoes into cubes, fry in a preheated pan with butter. We do not bring it to full readiness.
  12. We shift the potatoes to the meat, add more water (on the finger on top). Simmer until tender, but not for long – make sure that the potato wedges do not fall apart.
