Ingredients

For the dough:

  • Milk – 200 ml
  • Dry yeast – 1 teaspoon
  • Sugar – 1 teaspoon
  • Eggs – 2 pcs.
  • Butter (soft) – 60 g
  • Salt – 1/2 teaspoon
  • Flour – 420 g

For filling:

  • White cabbage – 1 pc.
  • Fresh chopped dill – 1 tbsp
  • Salt to taste
  • Ground black pepper – to taste
  • Vegetable oil – for frying

For greasing bagels:

  • Yolk – 1 pc.
  • Milk – 1 tablespoon

To prepare the baking sheet:

  • Flour
  • Butter

Directions

  1. Let’s start with the filling. Thinly chop the cabbage.
  2. Fry cabbage in a little oil (no lid, over medium heat).
  3. Let’s prepare the ingredients for the dough.
  4. Now let’s start a dough. We send yeast, sugar and a couple of tablespoons of flour to warm milk. Stir and let stand for 10 minutes.
  5. The cabbage is ready. Season to taste with salt and black pepper. Add finely chopped dill and mix well. Let the filling cool.
  6. Combine with flour (350 g), dough, eggs, salt. Knead the batter. cover with foil and let stand for 30 minutes in a warm place.
  7. The yeast is working well, the dough rises. We introduce soft butter.
  8. Pour flour (50-70 g) on ​​the table and stir in the dough until it starts to peel off from your hands.
  9. Cover with plastic wrap and let stand for about 1 hour. During this time, the filling will cool down well.
  10. Lightly knead the dough and divide into three equal parts. Roll each part into a cake with a diameter of 28-30 cm. Divide the cake into 8 parts.
  11. We roll each of the “tongues” obtained. We put the filling on the wide part.
  12. We pinch the wide part and wrap the bagel.
  13. We put the bagels on a prepared baking sheet with the tail down, so that they do not turn around. Cover with foil, let it come up while the oven is warming up.
  14. Before baking, grease the bagels with yolk mixed with milk.
  15. We bake at a temperature of 200 degrees for 20 minutes.
  16. The dough is delicious, the cabbage is very suitable for the filling! The bagels even have a layering effect.
