Baked Potatoes with Mediterranean Vegetables

Instructions

Wash the potatoes, rub dry with a paper towel and then rub with oil and sprinkle with the pepper and salt.
Peel the onions and cut into slices, also cut the spring onions into pieces. Then wash and clean the peppers, remove the seeds and cut into small strips. Then wash the tomatoes, but leave them whole. Put everything on a tray and season with the coarse salt and pepper and drizzle with oil. Then finally rub off the rosemary sprigs and sprinkle them over the potatoes and vegetables. Add a few twigs as a whole.
Now push the tray into the oven and bake at 200 ° C for about 20-25 minutes. If the potatoes curl a little on the skin, then they are done. You can also do a test with a carver.
When everything is cooked, arrange everything on a plate. Garnish with herbs, such as parsley or the sprig of rosemary.
If you want, you can also add cloves of garlic and additionally sprinkle dried sage over it, or fresh sage chopped.
