Ingredients
- 400 g lentils
- Salt and pepper, freshly ground
- 45 ml oil (sunflower oil)
- 1 onion (s), chopped
- 1 bell pepper (s), finely chopped red
- 1 tablespoon garlic, crushed (5ml)
- 3 banana (s), sliced
- 60 ml balsamic vinegar
- 3 tablespoon coriander, fresh (chopped)
- 2 tablespoon parsley, fresh (chopped)

- Rinse and cook the lentils, add salt towards the end of the cooking time. Drain the water and let the lentils cool. In the meantime, cook the onions, peppers and garlic in the oil.
- Add the other ingredients and mix carefully so that you don`t get mushy bananas. Season to taste with salt and pepper.
- Can be eaten warm or cold.
