Barley Porridge with Beef

Barley porridge with beef is a hearty and very nutritious dish. Inconsistency, the pearl barley porridge prepared according to this recipe turns out to be vicious, like risotto. And meat, previously stewed with vegetables, can literally be eaten with your lips. As for me, this is the perfect recipe for barley with meat!

Cook: 4 hours 50 minutes
Servings: 4

Ingredients

  • Pearl barley (raw weight is indicated) – 200 g
  • Beef – 400 g
  • Bulb onions – 1 pc.
  • Carrots – 1 pc.
  • Sunflower oil – 50 ml
  • Bay leaf – 1 pc.
  • Allspice (peas) – 3-4 pcs.
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Rinse the pearl barley several times, then cover with clean cold water and leave overnight (or at least 3 hours).
  2. Then drain the water, put the soaked barley in a saucepan with salted boiling water. Cook the barley until tender (about 1 hour). The ratio of cereals and water is 1: 3.
  3. Cut the beef into medium-sized pieces.
  4. Heat the sunflower oil in a skillet. Place the beef slices in hot butter.
  5. Fry the meat over high heat, stirring occasionally, until light crust.
  6. Peel the carrots and onions. Cut the onion into large cubes. Grate the carrots on a coarse grater.
  7. Transfer the carrots and onions to the skillet with the meat.
  8. Continue frying the beef with onions and carrots for another 5-7 minutes.
  9. Transfer the meat and vegetables from the pan to a saucepan or thick-walled saucepan. Pour in boiling water so that the water only covers the meat and vegetables, add salt and black pepper to taste.
  10. And simmer the beef over low heat for about 1 hour. Add water if necessary.
  11. Then add the bay leaves and allspice peas.
  12. Simmer the meat in vegetable sauce for another 15 minutes.
  13. After that, add the prepared barley to the beef stew.
  14. Stir and simmer the barley and beef over low heat for about 10 minutes.
  15. Barley porridge with beef is ready. Serve hot.
