Ingredients

For the dough:

  • 150 g almond (s), round
  • 5 tablespoon almond milk (almond drink), unsweetened
  • 50 g raisins
  • 10 grapes

For covering:

  • 5 apricot (s)
  • 1 squirt lemon juice
  • 2 small apples
  • 1 slice / s lemon (s)
  • 1 tablespoon almond flakes

Instructions

  1. For the dough, grind the raisins, grapes and almond milk in a blender until you get a creamy mixture. Mix the mixture with the ground almonds in a saucepan. The dough becomes slightly sticky. Add more ground almonds if needed.
  2. With the help of a cake ring (diameter approx. 20 cm) distribute the mixture on a cake plate.
  3. For the topping, grind the apricots and lemon juice in a blender to a puree. Peel the apples, remove the core and cut into thin slices. Rub a lemon wedge into each slice to prevent the apples from browning.
  4. Spread the apricot puree on the base and then layer the apple slices.
  5. Finally, decorate the cake with flaked almonds.

  7. If you like, you can also let the dough dry in the springform pan (20 cm) at 200 degrees for about 20 minutes in the oven. It will then be a bit cheesier. Make sure that the dough doesn`t get too crumbly.
