Beef Kharcho Soup with Tomatoes

The famous kharcho soup is a recipe that has rightfully become one of the symbols of Georgian cuisine. A real Georgian beef kharcho soup with walnuts, tklapi and spices is being prepared. This spicy, unusually aromatic dish will not leave anyone indifferent, cook and enjoy.

Servings: 6

Ingredients

  • Beef (brisket) – 500 g
  • Walnut – 1 glass
  • Tomatoes – 4-5 pcs.
  • Corn flour – 1 tbsp
  • or corn starch – 1 tbsp
  • Capsicum – 0.5-1 pcs.
  • Garlic – 2-3 cloves
  • Tilapia – 30 g
  • or Tkemali Sauce – 2-3 tbsp
  • Coriander (cilantro seeds) – 1 tbsp
  • Hmeli-surely – 1 tbsp
  • Salt – 1.5 teaspoon

Directions

  1. Prepare the ingredients for the beef kharcho soup with walnuts and tomatoes.
  2. Wash fatty beef, put in a saucepan, pour cold water (8-10 glasses) and cook.
  3. Before boiling, remove the foam with a slotted spoon.
  4. Crush the walnut or grind it with a blender.
  5. Peel and chop the pepper.
  6. Peel and chop the garlic.
  7. Combine pepper, garlic and salt in a mortar.
  8. Grind until smooth.
  9. Pour boiling water over the tomatoes, remove the peel.
  10. Cut the pulp into cubes.
  11. After 2 hours of cooking, take out the meat, cut into small pieces.
  12. Add crushed walnuts, paprika, garlic and salt, peeled and chopped tomatoes, sour pita bread (tilapia) or tkemali (or wine vinegar) to the broth.
  13. Dilute cornmeal or starch with water or broth (3 tablespoons).
  14. Add cornmeal diluted with broth to the soup. Cook for 10-15 minutes.
  15. By the end of cooking, add crushed coriander seeds (coriander), hops-surely to the kharcho soup and continue cooking for another 10 minutes.
  16. Beef kharcho soup with tomatoes is ready.
