Beef Kharcho Soup

Kharcho soup is made exclusively from beef, try this simple recipe.

Servings: 6

Ingredients

  • Beef – 500 g
  • Bulb onions – 3-4 pcs.
  • Rice – 0.5 cups
  • Tomato paste – 1 tbsp
  • Adjika – 1-3 tbsp
  • Garlic – 3 cloves
  • Bay leaf – 1-2 pcs.
  • Black peppercorns – 4-5 pcs.
  • Fresh greens – to taste
  • Salt to taste
  • Vegetable oil – 3 tbsp

Directions

  1. The ingredients are in front of you.
  2. Cut the beef into small pieces, put in a saucepan, pour 8-10 glasses of cold water and cook until half cooked (about 40 minutes). When boiling, remove the foam.
  3. Peel the onion and cut into cubes. Put the onion in the broth. Rinse the rice and add to the soup pot. Cook for 20 minutes.
  4. Rinse greens, dry and chop.
  5. After 20 minutes add half of the herbs, adjika, salt and pepper.
  6. Heat a frying pan, pour in vegetable oil, add tomato paste, stir. Add to soup.
  7. Peel and chop the garlic. Add garlic, remaining herbs and bay leaf to the soup. Let everything simmer together on the lowest heat for 5 minutes, covered.
  8. Pour the finished soup into bowls and serve. You can add chopped parsley to each portion.
