Beef Stew with Wild Mushrooms, Pickled Cucumbers, Cognac and Yogurt

An interesting meat dish a la beef stroganoff. The beef is first fried with cognac, then combined with wild mushrooms, fried with onions and pickled cucumbers. Instead of the usual sour cream for beef stroganoff, meat with mushrooms and cucumbers is stewed in natural yogurt with milk. Light cucumber acidity and cognac give the dish an interesting taste and aroma.

Ingredients

  • Beef (pulp) – 250 g
  • Forest mushrooms (fresh) – 200 g
  • Pickled cucumbers (or pickled) – 50 g (2 pcs.)
  • Onions – 40 g
  • Fresh parsley – 5 g (1 sprig)
  • Cognac – 50 ml
  • Natural yogurt (without additives) – 150 ml
  • Milk – 50 ml
  • Ground paprika – 0.5 teaspoon
  • Ground black pepper – 0.5 teaspoon (or to taste)
  • Salt – 1.5 teaspoon (or to taste)
  • Vegetable oil (for frying) – 60 ml

Directions

  1. Let’s prepare the necessary ingredients. We will use fresh forest mushrooms. Instead of pickled cucumbers, you can take pickled ones. We will choose natural yoghurt, without sugar and additives.
  2. We sort out the mushrooms, peel, wash and cut into small pieces.
  3. Rinse the mushrooms several times, fill with water (0.75 l), salt (1 teaspoon) and set to cook. We will cook the mushrooms from the moment of boiling for 20 minutes. After boiling, remove the foam.
  4. While the mushrooms are boiling, prepare the rest of the food. Cut the beef into small oblong pieces.
  5. Peel the onion and cut into half rings. Finely chop the parsley. Cut the cucumbers into small cubes.
  6. Heat half of the vegetable oil (30 ml) in a frying pan and add the beef. Fry the meat for 5 minutes over high heat.
  7. Pour cognac into the pan. Add salt (0.5 teaspoon or to taste), ground pepper and paprika. Fry the meat over low heat until the liquid evaporates.
  8. Put the boiled mushrooms in a colander, rinse.
  9. Heat the remaining oil (30 ml) in another pan, put the mushrooms and fry over medium heat for 5-7 minutes.
  10. Add cucumbers, parsley and onions to the mushrooms.
  11. Fry everything together for another 5-7 minutes, stirring occasionally. Salt to taste, if needed.
  12. Add mushrooms and cucumbers to the meat.
  13. Add yogurt and milk and mix.
  14. Put it out together for 10 minutes under the lid.
  15. Serve beef a la beef stroganoff with mushrooms, pickled cucumbers, cognac and yogurt with a side dish or as an independent dish.
