Beetroot and Carrot Salad with Nuts and Dried Fruits

Fresh beets, fresh carrots, dried fruits and nuts salad is a real vitamin explosion on your plate! Vegetables for the salad are not cooked to ensure maximum benefits. Delicious salad, which is very easy to prepare, will charge the whole family with vitamins, give a bright taste and good mood!

Ingredients

  • Beets – 700 g
  • Carrots – 800 g
  • Dried apricots – 5 pcs.
  • Pitted prunes – 5 pcs.
  • Walnuts – 30 g
  • Garlic – 3 cloves
  • Olive oil – 80 ml
  • Lemon (juice) – 1 pc.
  • Salt – 1-2 teaspoon

Directions

  1. We prepare the necessary products.
  2. Peel and grate the carrots in Korean style.
  3. We peel the beets and also grate them on a carrot grater in Korean.
  4. Grind the nuts with a blender.
  5. We wash the dried fruits. Cut the prunes into small cubes.
  6. Cut dried apricots into small cubes.
  7. Peel the garlic and pass it through a press.
  8. Squeeze juice from lemon and add to garlic. We put a strainer on the bowl so that the pulp and lemon seeds do not get into the dressing.
  9. Pour in olive oil. Salt the dressing and beat with a whisk.
  10. Put prunes, nuts and dried apricots in the dressing. We mix.
  11. Pour the dressing onto the carrots with beets.
  12. Mix thoroughly. We cover with a lid or cling film and send to the refrigerator for several hours.
  13. Beetroot salad with carrots, dried fruits and nuts is ready.
