Beetroot Leaves with Fried Bacon

Beet leaves are served fresh with fried bacon.

Ingredients

Beetroot (coarsely chopped) – 6 cups
Smoked bacon – 2 strips
Apple cider vinegar – 2 teaspoon
Ground black pepper – 1/4 teaspoon.

Directions

Heat a skillet over medium-high heat. Place the strips of bacon in a preheated skillet and fry until brown on all sides. Transfer the bacon to a paper towel to drain off the fat. Break the bacon into small pieces.
Remove the frying pan in which the bacon was fried from the stove, add apple cider vinegar and black pepper, mix well.
Add beet leaves to this dressing, sprinkle with bacon, stir and serve immediately with bacon and beet leaves.
