Belgian Almond Cake

People with a sweet tooth will be conquered! Appetizing, quick, and easy! An amazing and exquisite treat in the form of an almond cake. It is tender and light in texture and has a rich almond flavor, moderately sweet. Everyone will like it!

Ingredients

  • Almonds – 125 g
  • Butter – 125 g
  • Wheat flour – 75 g
  • Sugar – 125 g
  • Vanilla sugar – 25 g
  • Eggs – 3 pcs.

Directions

  1. Pour boiling water over the almonds and leave them for 5-10 minutes.
  2. Pour out the water and remove the hulls.
  3. Spread the almonds out on a baking tray and dry them in a preheated 180-degree oven for 15 minutes.
  4. Finely chop the cooled almonds with a knife or grind them with a blender.
  5. Separate the yolks from the whites.
  6. Whisk the whites to stiff peaks until foamy  – this is important.
  7. Mix the butter with sugar into a light and fluffy cream.
  8. Add the yolks one by one alternately with chopped almonds and whisk constantly.
  9. Add the beaten whites carefully to the cream mixture alternately with the sifted flour.
  10. Put the dough into a round baking dish greased with some butter. Bake the cake for 35-40 minutes until browned. You can sprinkle the baked almond cake with powdered sugar.
