Ingredients
- 4 slices cheese, slightly melting, strong, semi-hard (e.g. Chaume)
- 8 slices aubergine (s), cut lengthways
- salt
- 2 egg (s), whisked
- Flour
- Olive oil, for frying

- Place 1 slice of cheese between 2 aubergine slices. Sprinkle the eggplant sandwich with salt on both sides. Dip in egg, then turn in flour. Fry on both sides in a little olive oil over medium heat until golden brown. Serve hot.
