Ingredients

  • 1 kg potato (s), floury boiling
  • 60 g bacon, diced
  • salt
  • 3 tablespoon butter, for frying (or highly heatable oil)
  • 4 egg (s)
  • butter
  • Pepper from the grinder
  • little paprika powder

Instructions

  1. Cook the potatoes unpeeled the day before. Peel the potatoes while they are still hot.
  2. The next day, grate the potatoes with the hash browns. Fry the bacon cubes in the frying pan. Salt and add the potatoes.
  3. Gradually add the clarified butter. Fry everything, turning occasionally, over a medium heat for about 15 minutes.
  4. Shape a rösti cake with the help of the roasting spatula. Continue frying for about 5 minutes until a crispy, golden-brown crust has formed. Turn the hash browns in the air or with the help of a plate. Fry the 2nd side as desired.
  5. In another pan, fry the fried eggs in a little butter. Slide the hash browns onto a plate, place 1 fried egg on top, arrange the remaining fried eggs on a plate. Season with salt, pepper and a little paprika powder. Serve immediately.
  6. Tip: Fry the bacon and serve on the rösti or have the rösti baked with a little cheese.
