Blackberry Mousse Cake with Yogurt (no Baked)

A light, airy mousse cake is the hostess’s dream, and if there is no need to bake it, then in general there is no better recipe. The color of the blackberry is so intense that it is a sin not to use it for coloring mousses and yogurts. It’s especially nice that you don’t need to knead the dough. For this no-bake blackberry yogurt cake, we’ll make a pre-made cookie base.
Ingredients
- Blackberries – 350 g
- Banana – 0.75 – 1 pc.
- Shortbread cookies – 190 g
- Sweet yogurt – 300 ml
- Thick fat sour cream – 150-200 g
- Coconut flakes – 20-30 g
- Vanillin – to taste
- Gelatin – 30 g
- Sugar – 2 tbsp
- Water – 100 ml
How to make a yogurt cake without baking:
Directions
- Pour gelatin into hot water (it should be about 90 degrees). With constant stirring, we need to get a gelatin solution.
- Grind the cookies with sour cream and shavings in a blender until you get the dough.
- We interrupt 100-150 g of blackberries with yogurt, gelatin solution, sugar, banana, vanilla.
- Pour the yogurt blank for our mousse cake into the mold. This blank yogurt mousse cake should be in the refrigerator until it solidifies.
- We connect two cakes. To do this, on a round plate, we form a crust from the dough, which we got from cookies, shavings, and sour cream.
- We attach this plate of dough to the yogurt-mousse cake. You must first put the form with this mousse in hot water for 20 seconds.
- Then this yogurt layer will easily move away from the walls and take its place on our cake.
- Decorate this no-bake yogurt cake with blackberries.
