Borscht with Dried Mushrooms

Want to please your family for lunch? Then cook borsch with dried mushrooms. Yes, yes, it is with dry, and nothing else! Borscht with mushrooms just drives you crazy with its aroma and unique rich taste.

Cook: 1 hour 40 mins

Ingredients

  • Dried mushrooms – 50 g
  • Chicken breast (or leg) – 1 pc.
  • Beets – 1 pc.
  • White cabbage – 200 g
  • Potatoes – 3 pcs.
  • Carrots – 1 pc.
  • Bulb onions – 1 pc.
  • Tomato paste – 2 tbsp
  • Garlic – 2 cloves
  • Vegetable oil – for frying vegetables
  • Salt to taste
  • Bay leaf (optional) – 2 pcs.

For serving (to taste):

  • Sour cream
  • Fresh greens
  • Ground black pepper

Directions

  1. Soak dried mushrooms (I have mushrooms and aspen mushrooms) for 30-40 minutes to swell.
  2. Wash the chicken breast and boil the broth from it in salted water. Cook for 30 minutes from the moment of boiling.
  3. While the broth is cooking, chop the vegetables. Cut onions and carrots into small cubes. Cut the potatoes into cubes. Cut the beets into strips. Finely chop the cabbage into strips.
  4. When the broth is cooked, send the potatoes to the pan. Remove the chicken breast from the broth, later return the meat to the borscht.
  5. When the broth with potatoes boils, add the soaked mushrooms there. Cook for 20-30 minutes, until mushrooms, are soft.
  6. While the potatoes and mushrooms are boiling, prepare the borsch dressing. To do this, fry the onions and carrots in vegetable oil until golden brown.
  7. Separately fry the beets with tomato paste, add a little water and simmer for 10 minutes, until the beets are soft.
  8. Add beets with tomato paste to borscht. Send onions and carrots there.
  9. When everything boils, add chopped cabbage. Bring the borsch with mushrooms to a boil and cook for 5-7 minutes or until the cabbage is soft.
  10. Meanwhile, squeeze the garlic through a press. Cut the boiled chicken breast into portions.
  11. When the cabbage reaches the desired softness, add garlic and slices of chicken breast to the borsch with mushrooms. You can add bay leaves if desired. Bring the chicken borscht to a boil, cook for 1-2 minutes. Let the borscht brew for 15-20 minutes.
  12. Serve borsch with sour cream and herbs. Sprinkle with black pepper if desired. Bon Appetit!
