Bouillabaisse

Bouillabaisse is a French cuisine dish, fish soup of Marseille sailors. Here’s a bouillabaisse recipe that I cook at home.

Ingredients

  • Red fish (for example, the head and tail of a salmon) – 600 g
  • Mussels – 300 g
  • Squid – 200 g
  • Shrimps – 200 g
  • Celery, root – 200 g
  • Carrots – 1 pc.
  • Bulb onions – 1 pc.
  • Salt to taste
  • Spices (paprika) – to taste
  • Vegetable oil – for frying

Directions

  1. We cook fish broth. I take the head and tail of the salmon, peel, cut into pieces and set the broth to simmer. I add the chopped celery and carrots. In the meantime, I am preparing the dressing – I fry the onions in heated oil for 5-7 minutes. Add paprika, mix well and fry for another 1 minute.
  2. The dressing is ready, I put it in our broth. When the broth has boiled for about 20 minutes, add the mussels. Followed, after 5 minutes, – shrimp, and after another 5 – squid.
  3. After adding the squid, cook for 3 minutes and turn it off.
  4. Our fish soup is ready.
