  • 1 tablespoon, heaped spring onion (s), the green, cut into fine rolls
  • Sea salt and pepper, black

Instructions

  1. Always only fried eggs, scrambled eggs or boiled eggs for breakfast gets boring at some point. That`s why I created my Breakfast Cloud 7. First, the eggs need to be separated into yolks and whites. To do this, the eggs are beaten all around in the middle and the shell halves are carefully broken open. Let the egg white drain into a glass, for example. Carefully slide the egg yolk back and forth between the eggshell halves several times until all of the egg white has run off. Gently slide the egg yolks into a moistened tablespoon. First set the egg yolks aside. It is very important that NOT A BIT OF egg yolk gets into the egg white, otherwise it will never set. If that happens, please start over. Sorry In order to whip the egg white into egg foam, NOT A BIT OF fat should get on it. It is best to use a metal mixing bowl and wash and rinse it beforehand if possible. Now the fridge-cold egg white comes into the bowl and a good pinch of salt is added. Now whisk with the food processor for one minute on a slow speed. Then switch to the highest level and mix until a fine-pored egg foam has formed. The egg foam is firm enough if you cut into it with a knife and the cut remains visible. Now sprinkle the parmesan on top and carefully fold in with a spoon. Preheat the oven to 180 degrees top / bottom heat. Place a sheet of baking paper on a baking tray and lightly grease it with the rapeseed oil using a brush. Cut the bacon slices in the middle and place them on the baking paper as a kind of square, slightly overlapping. The egg foam is now served on the bacon in a cloudy shape with a spoon. Finally, moisten the spoon and form a hollow in the top of the egg foam, into which the egg yolk will later be placed. Now the tray is placed on the middle rail of the oven at 180 degrees for 8 minutes. Then turn off the heat and let the egg foam set for another 8 minutes. Ideally, the egg foam has already turned a little brown. Take out the tray and reheat the oven to 180 degrees. Carefully slide the egg yolk from the tablespoon into the hollow of the egg foam. VERY careful not to leak the yolks. Now the tray comes back on the middle rail of the oven at 180 degrees and stays in the oven for 5 minutes. Then arrange on plates of your choice and garnish with the spring onion rings. Grind a touch of salt and black pepper fresh from the grinder and you`re done!
