Ingredients
For the soup:
- 500 g broccoli
- 100 g bacon, mixed
- 1 onion (s)
- 1 tablespoon butter
- 2 tablespoon flour
- 1 ¼ liter vegetable stock
- salt and pepper
- 1 tablespoon thyme, dried
Also: (for the toast)
- 4 slices toast
- 2 tablespoon butter
- 5 tablespoon Emmentaler cheese, grated
- 2 tablespoon parsley, chopped
- 4 tablespoon almond sticks

- Chop the broccoli, dice the bacon and chop the onion.
- Heat 1 tablespoon butter, fry the bacon and onions in it. Sweat the flour in it and pour in the vegetable stock while stirring. Bring to the boil and add the broccoli. Cook for about 15 minutes. Season with salt, pepper and thyme.
- Mix the remaining butter with the cheese and parsley. Brush the toast with it, spread the almonds on top and bake the bread for 8 minutes at 250 ° C in the oven.
