Bulgur with Cauliflower and Sweet Pepper

Suffice it to say that for dinner there is bulgur with vegetables, and our whole family will gather at the table.) This is how much we love this nutty cereal! This dish is always obtained, no matter what vegetables you choose! Bulgur with cauliflower and paprika is one of our favorites. Juicy cauliflower, bright bell pepper, and golden bulgur – delicious and aromatic!

Ingredients

  • Bulgur – 200 g
  • Cauliflower – 300 g
  • Bulgarian red pepper – 125 g (0.5 pcs.)
  • Carrots – 100 g (1 pc.)
  • Dried ginger – 1 teaspoon
  • Vegetable oil – 2 tbsp
  • Curry – 0.25 teaspoon
  • Ground turmeric – 0.25 teaspoon
  • Ground paprika – 0.5 teaspoon
  • Salt – 0.5 teaspoon (to taste)
  • Ground black pepper – 0.25 teaspoon (to taste)

Directions

  1. Prepare food. You can choose spices at your discretion, I have curry, turmeric, paprika, ginger, and black pepper. Peel the bell peppers and carrots.
  2. Cut the carrots into small cubes and the bell peppers into strips. Disassemble the cauliflower into inflorescences, and then cut them into smaller pieces so that the cabbage has time to cook along with the bulgur.
  3. Heat a frying pan with vegetable oil and add spices to it.
  4. Heat spices slightly in oil.
  5. Place cauliflower, carrots, and bell peppers in a skillet.
  6. Stir occasionally and saute vegetables over low-medium heat for 10 minutes.
  7. Pour bulgur into the pan.
  8. Stirring constantly, fry over high heat for 2 minutes. This will allow the bulgur to maximize its nutty flavor and, moreover, it will turn out to be more crumbly.
  9. Pour 400 ml of water over bulgur with vegetables, add salt. Bring water to a boil. Reduce heat to low, cover skillet, and cook bulgur for about 25 minutes.
  10. Bulgur with cauliflower and pepper is ready!
  11. Serve the dish to the table hot, if desired, supplement with fresh or canned vegetable salads. This dish can be served as a side dish or as a full meal.
