Burrito from Freezer

Every morning when you bite into a delicious, warm, cheesy, hearty burrito, you will thank yourself for making your breakfast burrito in advance.

Cook: 45 mins

Servings: 8

Ingredients

  • 10 large eggs
  • 1/4 cup milk
  • salt and pepper to taste
  • 2 cups grated cheese, divided
  • 3 tablespoons olive oil
  • 2 cups grated potato croquettes
  • 1 kilogram of chopped Italian sausage
  • 8 strips of turkey bacon
  • 8 extra-large flour cakes
  • 8 pieces of foil

Additional filling:

  • avocado or guacamole
  • salsa
  • hot sauce
  • chopped tomatoes or pico de gallo
  • coriander

Directions

  1. Add the potato chips to a large skillet over high heat. Drizzle with oil and season with salt and pepper. Cook for 6-10 minutes, stirring occasionally, until crisp. Set aside.
  2. In a medium bowl, combine eggs, milk, salt, and pepper to taste. Add to a greased skillet and stir occasionally over medium heat for 6-8 minutes until tender. Add 1/2 cup of cheese. Set your eggs aside.
  3. Cook the sausage in a large skillet over high heat, crushing it with a spoon or spatula, about 8-10 minutes, until golden brown. Set aside.
  4. Place the tortillas in the microwave for 20-30 seconds, until they are warm and pliable. Collect burritos by dividing potato croquettes, eggs, sausage, bacon, and cheese in the center of each tortilla. Roll the burrito tightly.
  5. Place each burrito in the center of the piece of aluminum foil. Fold the ends of the leaf over the burrito, then twist it tightly. Place in Ziploc package, remove excess air, and close package. Freeze until ready to use.
  6. When everything is ready, bake the burritos wrapped in foil in an oven preheated to 400 degrees for 12-15 minutes. Expand and decorate with the ingredients you want and enjoy!
