Burrito with Fried Bean

Let’s try to cook a popular Mexican snack – a burrito with beans, cheese, and tomatoes.

Ingredients

  • Lavash thin 2 pcs.
  • Red beans 500 g
  • Bay leaf 2 pcs.
  • Bulb onions 3 pcs.
  • Garlic 11 cloves
  • Hot peppers 4 pcs.
  • Olive oil 0.25 cups
  • Black pepper (ground) pinch
  • Coriander (ground) pinch
  • Zira (ground) pinch
  • Cilantro 1 bundle
  • Pork fat 80 g
  • Tomato 3 pcs.
  • Red onion 1 pc.
  • Lemon juice 0.5 cups
  • Sugar 0.5 tbsp
  • Cheddar cheese 200 g
  • A pinch of salt

Directions

  1. Soak the sorted and washed beans in a large saucepan with cold water. Leave for 4 hours, add bay leaves, coarsely chopped onions, garlic (7 cloves), and hot peppers (3 pcs.). We leave for another 4-5 hours. Then add olive oil and salt to taste.
  2. Put on fire, cover, and cook until the beans are cooked. A few minutes before the end of cooking, put coriander, cumin, and chopped cilantro in a saucepan. Pour the broth into a separate bowl, and beat the beans in a blender. If necessary, you can add broth, you should get the consistency of mashed potatoes. Fry the finished mass in pork fat.
  3. Cooking the sauce. Fill the tomatoes with boiling water, leave for a couple of minutes and carefully remove the skin, cut into slices, and remove the seed part. Peel the onion and garlic (4 cloves), wash under cold running water, dry, and chop finely. Pepper (1 pcs.) Wash, dry, and cut into small pieces. Wash cilantro, dry, and chop finely. Combine prepared sauce ingredients, add lemon juice, sugar, and salt. We grind everything thoroughly in a blender.
  4. Cut the lavash sheets in half, apply the sauce, put the beans on top, and sprinkle with grated cheese. Warm-up in the microwave for a few minutes.
