Butter Bagels made from Yeast Dough with Milk and Sour Cream

These soft bagels made from yeast dough with milk and sour cream are prepared in a somewhat unusual way. Before baking in the oven, the bagels are dipped in boiling water for 15-30 seconds. This technique allows you to make the dough even more fluffy and airy!

Ingredients

For dough:

  • Milk (warm) – 300 ml
  • Sugar – 50 g
  • Flour – 100 g (2/3 cup, 250 ml capacity)
  • Dry yeast – 10 g

    For the test:

  • Sour cream (10% fat) – 150 g
  • Butter (soft) – 100 g
  • Sugar – 100 g
  • Flour – 600 g (4 cups with a capacity of 250 ml)
  • Salt – 1 teaspoon

    To grease bagels:

  • Water – 100 ml
  • Sugar – 2 teaspoon

Directions

  1. Combine flour, sugar, and dry yeast necessary for making dough in a bowl. Stir.
  2. While stirring the dough, gradually pour in the warm milk. Leave the dough in a warm place for 15-30 minutes. The dough should become fluffy and covered with bubbles.
  3. In a large bowl, combine flour, salt, and sugar to make a dough. Stir.
  4. Add sour cream. Stir again, then add the matched brew and soft butter to the bowl.
  5. Knead a soft dough. To do this, knead the dough with your hands on the table for about 10-15 minutes. At first, it sticks to your hands and is not uniform, but as the air is saturated with air, the dough becomes obedient and springy.
  6. Place the dough in a bowl, cover with a cloth towel, and place in a warm place for 1-1.5 hours. The dough should at least double in volume.
  7. Hump ​​over the risen dough and divide it into about 70 g pieces. Roll each piece into a neat ball. I got 20 balls. Place the balls on a board and cover with a cloth towel. Let sit for 20 minutes.
  8. In each ball, make a through-hole in the center and stretch the dough until you get the evenest donut with a diameter of about 9-10 cm.
  9. Place the bagels on a board, cover with a cloth towel and let rise for 10-15 minutes.
  10. Turn on the oven to heat up to 200 degrees. Line a baking sheet with parchment paper. If the paper is of poor quality, then you can additionally grease it with soft butter. Boil 3-4 liters of water in a large saucepan. Dip each bagel in boiling water for 15-30 seconds and transfer to a baking sheet lined with paper using a slotted spoon.
  11. Place the bagels in an oven preheated to 200 degrees and bake for 15 minutes, until a delicious browning. Mix water and sugar to grease the bagels. Remove the prepared bagels from the oven and brush immediately with this water. Transfer the bagels to a clean bowl and cover with a cloth towel.
