Butter Buns with Streusel and Raisins

New! Deliciously airy buns with crispy crumbs. The most delicious pastry! Homemade buns with raisins are soft, flaky inside, crispy, fragrant and very tasty.

Ingredients

For the dough:

  • Warm milk – 150 ml
  • Egg – 1 pc.
  • Melted butter – 30 g
  • Flour – 400 g
  • Dry fast-acting yeast – 7 g
  • Sugar – 1 tbsp
  • Salt – 0.5 teaspoon

For filling:

  • Flour – 100 g
  • Sugar – 100 g
  • Vanilla sugar – 1 teaspoon
  • Cold butter – 60 g
  • Raisins (optional) – 80 g

To grease buns:

  • Egg – 1 pc.
  • Milk – 1 teaspoon

Directions

  1. Sift 250 g of flour (the rest will be added in portions so as not to clog the dough with flour). Add yeast, sugar, salt, mix with a whisk.
  2. Pour warm milk into the flour, add the egg and melted butter. We knead the dough. Flour mixed in – add another 150 g, you may need a little more or a little less. The dough will be soft and not sticky to your hands.
  3. Grease the cup with vegetable oil, spread the dough. Cover the cup with plastic wrap. We put in a warm place for about 1.5 hours to get up.
  4. Cooking the filling. In a cup, mix flour, sugar, vanilla sugar, raisins (rinse the raisins and dry them with a paper towel). Add cold butter, mix with your hands, get crumb.
  5. The dough rose, increased in size, became porous and airy.
  6. Roll out the dough into a rectangle 3-4 mm thick. Sprinkle one half of the dough with crumbs, cover the top with the second half of the dough, dust it with flour, roll it with a rolling pin both in length and width.
  7. Sprinkle one half of the dough with crumbs again, cover with the other half of the dough, sprinkle with flour and roll out.
  8. We also do it again, but we do not roll it out any more, but simply press it with our hand, pinch the edge.
    Cut into pieces, I get 10 rolls.
  9. We pinch the opposite edges, press in the center – it turns out a bun. We spread on a baking sheet covered with parchment. If desired, grease the buns with an egg on top and sprinkle with crumbs in the center. Cover with foil and leave for 20-30 minutes for proofing. We bake in an oven preheated to 180 degrees for 30 minutes.
  10. Put the hot buns on a dish and let cool.
