Carrot Muffins

Ingredients
- Butter (or margarine) – 200 g
- Flour – 200 g
- Eggs – 4 pcs.
- Sugar – 150 g
- Carrots – 1 pc. (large)
- Baking powder – 1 teaspoon

For glaze:
- Powdered sugar – 200 g
- Lemon juice – 2 tbsp
- Boiling water – 2 tbsp
Directions
- Beat butter with sugar until creamy white.
- Add eggs one at a time, continuing to beat on low speed.
- Add flour, baking powder, finely grated and squeezed (in case of excess juice) carrots. Mix everything properly.
- Put the dough into molds (I had paper ones) and bake the carrot muffins at 180 degrees for about 25-30 minutes.
- Make the glaze: mix boiling water with lemon juice and icing sugar. Stir the icing and pour over the carrot cakes.
