Cauliflower Risotto with Wild Mushrooms

Cauliflower risotto – not “with”, but “from”. A wonderful invention, a real find for those who would like to eat less fast carbohydrates, but are not ready to give up such delicious things as risotto with mushrooms. Slightly crunchy pieces of cauliflower blossoms are ideal substitutes for al dente rice. However, cauliflower has a drawback, which, as it should be, is a continuation of its advantages: unlike rice, it does not contain starch, which is a “real” risotto that creates a weightless creamy cocoon that envelops every rice. But I wouldn’t post this recipe if I hadn’t come up with a way to fix it.

Ingredients

  • 400 g cauliflower
  • 1 small onion
  • 2 cloves of garlic
  • 10 g dried mushrooms
  • 60 g fresh or frozen mushrooms
    or
  • another 10 g of dried mushrooms
  • 1 tablespoon olive oil
  • 50 g butter
  • 50 ml. cream
  • 2 tablespoon grated parmesan or other hard cheese
  • 4 allspice peas
  • a few sprigs of thyme
  • a few sprigs of parsley
  • salt
  • black pepper

Directions

  1. 20-30 minutes before cooking, put the dried mushrooms in a small saucepan, pour boiling water (half a liter of water or a little more will be enough), cover, and leave to brew.
  2. Disassemble the cauliflower: the inflorescences separately, the stalk and especially thick stems – separately, and the first should be about three times more than the second.
  3. Cut the stalk and stems into medium-sized pieces, add to the mushrooms, send allspice and thyme there, bring to a boil and cook over low heat for about 20 minutes until soft.
  4. Place the cauliflower inflorescences in the blender bowl (if the bowl is small or there are too many inflorescences, then in parts) and in the pulse mode – that is, turning the blender on and off – chop them into pieces about the size of a grain of rice. It is clear that some pieces will be a little larger, some a little smaller, but do not bother you, the main thing is that most of them are about the same size.
  5. Put a frying pan over medium heat, heat a spoonful of olive oil, add the same amount of butter, and, stirring occasionally, fry the finely chopped onion and garlic until transparent.
  6. Add the chopped cauliflower florets and sauté for a minute, stirring constantly, so that oil envelops each bite. By this point, the cauliflower stalks are most likely completely cooked.
  7. Strain the broth in which they were cooked, pour it into a frying pan, salt its contents, and increase the heat: the broth should completely evaporate in about five minutes – this way the inflorescences will get the maximum rich mushroom flavor, but will not have time to lose their crispness.
  8. Throw away the thyme and allspice, which have given their aromas to the broth, and combine the stems in a blender with some of the dried mushrooms, the remaining butter, a spoonful of grated cheese, and cream, and beat until smooth.
  9. You should have a thick mass, but still a liquid consistency, so if necessary, you can dilute it with a spoon or two of mushroom broth.
  10. Cut the remaining dried mushrooms into pieces and add them to the pan, and if, in addition to dried mushrooms, you use fresh or frozen ones, it’s time to heat some oil in a second pan, quickly fry them on all sides with garlic, and keep warm.
  11. When the actively boiling broth has evaporated almost completely, remove the pan from the heat and add the thick boiled stem sauce and finely chopped parsley.
  12. Gently but vigorously stir the contents of the pan and cover it with a lid for a couple of minutes, then immediately place the cauliflower risotto on plates, top with the fried mushrooms, sprinkle with the remaining grated cheese, season with black pepper, and serve immediately.
