Cheese Soup with Smoked Sausages, Potatoes, and Rice

Although this soup with rice, smoked sausage, and melted cheese is not cooked in meat broth, it turns out to be rich, with a wonderful taste and aroma. Cheese soup cooks quickly enough. If you don’t have a lot of time to prepare dinner, try this soup.

We prepare all the necessary products.
Peel the garlic and cut it into small pieces.
Peel the onion and cut it into cubes.
Peel the carrots and cut them into quarters.
Fry the onions and carrots in vegetable oil over medium heat until the onions are translucent. Then add the garlic and fry for another 1 minute.
Cut the sausages into small circles.
Cut the potatoes into medium-sized pieces. If you do not use the potatoes right away, then you need to fill it with cold water so that it does not darken.
Add sausages to the fried vegetables.
Fry the sausages with onions and carrots for about 3 minutes, until the sausages are browned.
Then add potatoes to the pan.
Fry, stirring occasionally, for about 5-7 minutes.
Fill the fried vegetables with sausages with 1.4 liters of hot water and let it boil.
After boiling, add rice.
Together with rice, put bay leaf and black peppercorns in the soup. Cook for another 15 minutes, until rice and potatoes are done. At this time, the soup needs to be salted to taste.
We rub the processed curds on a coarse grater.
Take out the bay leaf and add cheese to the soup.
Cook the soup for 2-4 minutes, until the curds dissolve.
Remove the finished cheese soup with smoked sausages, potatoes, and rice from the heat and put it on plates. Add chopped greens and crackers to each plate.
