Cheesecake “Lazy”

My first cheesecake. Well, in any case, I decided that it was him. 🙂 I wanted something fast, tasty, beautiful, and not to turn on the oven!

Ingredients

For the basics:

  • Biscuits- 250 g
  • Butter – 200 g
  • Vanilla sugar – 20 g
  • Vanilla liqueur – 20 ml
  • Fruit jelly (jam, confiture) strawberry – 100 g

For the cream:

  • Egg yolk – 2 pcs.
  • Granulated sugar – 1 tablespoon
  • Mascarpone – 400 g
  • Cream 33% – 200 ml
  • Powdered sugar – 100 g
  • Gelatin – 10 g
  • Water – 80 ml

For decoration:

  • Fresh strawberries – 250 g
  • Jelly – 1 glass
  • (250 g compote + 5 g gelatin)

Directions

  1. Grind the cookies, combine with cold butter. Pour in sugar, add liquor, mix.
  2. I carried out all these actions at the same time in the bowl of the combine. That is, she poured all the ingredients and chopped it with a knife.
    Without a combine, there are many ways to grind cookies: in a bag – and roll out with a rolling pin, in a bowl – and crush with a crush, mince, etc. Then add vanilla sugar, pour in liquor and grind with butter.
  3. Line the bottom of the form with parchment. I thought that it was possible to tighten the entire form with a film, for reliability, but I did not have it.
  4. Put the base mass into a mold and form a basket with your fingers. If I had a film, I would not make a basket, but just a bottom. And I was so afraid that I would not take him out of the form. Put in the refrigerator.
  5. Filling.
    Beat the yolks with a spoonful of sugar in the cream.
    Beat the cream with powdered sugar until firm.
  6. Mascarpone softens with a fork, gently combine with cream, add yolks, mix.
  7. Soak the gelatin in 80 ml of water for 15 minutes. Boil it without boiling, cool to 40 degrees, slowly pour into the cream, stirring.
  8. Remove the base from the refrigerator, cover the bottom with strawberry jam.
  9. Put the cream on top, smooth, put in the refrigerator for 2 hours.
  10. Cut the strawberries into petals.
  11. Decorate the cake with strawberries.
  12. Pour jelly on top. Refrigerate for another 4-6 hours.
