Chicken, Carrot and Beetroot Sandwiches

Sandwiches are made from toast, fried chicken and carrot and beetroot salad. Tasty and healthy.

Servings: 4

Ingredients

  • Fried chicken meat (cut into small pieces) – 4 cups
  • Carrots (chopped on a grater) – 0.5 cups
  • Beets (chopped on a grater) – 0.5 cups
  • Petiolate celery (finely chopped) – 1 stalk
  • Golden raisins – 0.25 cups
  • Mayonnaise – 0.25 cups
  • Lime juice – 2 tbsp
  • Salt to taste
  • Ground black pepper – to taste
  • Salad onion (finely chopped) – 3 tbsp
  • Extra virgin olive oil – 2 tbsp
  • Fresh cilantro (chopped) – 0.5 cups
  • Lettuce – 8 leaves
  • Whole grain bread (fried) – 8 slices

Directions

  1. In a small bowl, combine mayonnaise, 1 tablespoon lime juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Add chicken, raisins, celery and onions to this mixture, season with salt and pepper to taste.
  2. In another bowl combine olive oil, 1 tablespoon lime juice, 1/2 teaspoon salt and 1/4 teaspoon pepper, and mix well. Put carrots, beets and cilantro into this mixture, mix.
  3. On four of 8 slices of bread, place one leaf of lettuce each, on top of the chicken salad, on it the carrot mixture, cover the chicken sandwiches with another leaf of lettuce and on top of a slice of bread. Cut each sandwich in half diagonally and serve the chicken sandwiches immediately.
