Chicken Fillet with Vegetables and Mushrooms

A fragrant dish of a huge amount of the healthiest green vegetables – green beans, celery stalks, leeks, green onions and parsley. The chicken fillet in a very interesting marinade and mushrooms give the dish nourishment, usefulness and self-sufficiency.

Ingredients

  • Chicken fillet (or other meat) – 250 g
  • Champignons – 250 g
  • Green beans – 250-300 g
  • Celery stalk – 3 large stems
  • Red onion (medium) – 1 pc.
  • Leek (white part) – 10-15 cm
  • Green onion – 2-3 feathers
  • Fresh parsley – small bunch
  • Garlic – 4 cloves
  • Adjika – 1 teaspoon.
  • Apple juice (directly squeezed) – 2 tbsp
  • Vegetable oil – for frying
  • Salt to taste
  • Black pepper – ground to taste

Directions

  1. Take 250 g of chicken fillet (or other meat). We cut it into pieces that will be comfortable for you when fried in a finished dish. Add a little adjika (its amount depends on its severity) and a little directly squeezed baby apple juice. You should get a moist marinade of adjika and juice that envelops the chicken well. But the chicken shouldn’t swim in it. Leave the chicken to marinate for 30 minutes
  2. Chop 250 g of champignons at random. I like it big.
  3. We also cut one medium-sized red onion at random. I cut the rings into quarters.
  4. Cut the white part of the leek (10-15 cm) into rings.
  5. Grind a couple of green onion feathers. Grind a small bunch of parsley. Rub a few cloves of garlic on a fine grater or chop in a convenient way.
  6. Grind the celery. I don’t use fennel in this dish, but rather a little more celery. In this case, I took 3 large stems.
  7. In a frying pan in any vegetable oil, fry the chicken fillet to the degree you like (the stronger, the drier it will turn out).
  8. Remove the chicken from the pan onto a plate.
  9. And in the same frying pan, fry the mushrooms and red onions, again to the degree you like. Shortly before the mushrooms are ready, add the grated garlic and fry for a couple of minutes.
  10. Then add celery and leeks. Fry the celery until softened.
  11. Add 250-300 g of green beans and fry, stirring occasionally, for 5-7 minutes.
  12. Return the chicken to the pan, add the green onions, parsley, salt and pepper.
  13. Stir, reduce heat, cover and simmer chicken with vegetables and mushrooms for 10 minutes.
  14. Chicken fillet with vegetables and mushrooms is ready! The ratio of vegetables can be changed to your taste. Without meat, the dish will be lean.
