Ingredients

  • 1 onion (s), red
  • 4 cloves garlic
  • 1 teaspoon lemon zest, grated
  • 1 teaspoon chilli flakes
  • 1 teaspoon paprika powder
  • 2 tablespoons oil
  • 2 tablespoon red wine vinegar
  • 1 chicken about .4kg
  • 1 bunch parsley
  • Lemon (s) - wedges for serving

Instructions

  1. Work the spices with the oil and vinegar into a paste.
  2. Use poultry scissors to cut open the back of the chicken and remove the backbone. Now turn over and press flat. Cut into the meat with a sharp knife and rub the seasoning paste, cover and put in the refrigerator overnight.
  3. The next day, preheat the oven to 200 °. Now place the chicken in the rack with the skin side up. Fry for 40-50 minutes until cooked. Sprinkle with the chopped parsley and drizzle with the gravy and serve with lemon wedges.
