Chicken Kharcho

You can, of course, say that chicken kharcho is not kharcho, the recipes for this soup may differ in various ingredients, but beef is always present in it. Let’s assume that the chicken kharcho recipe is a variation on the classic Georgian soup. The main thing is that the chicken kharcho is very tasty!

Servings: 4

Ingredients

  • Chicken – 1 kg
  • Onions – 100 g
  • Flour – 25 g
  • Tomatoes – 500 g
  • Walnut Kernels – 1.5 cups (to taste)
  • Garlic – 10-15 g
  • Cilantro – 1 bunch (to taste)
  • Bay leaf – 1-2 pcs. (taste)
  • Black peppercorns – 10 pcs. (taste)
  • Allspice peas – 4 pcs. (taste)
  • Salt – 1 tbsp (to taste)
  • Cinnamon – 1 pinch (to taste)

Directions

  1. Chicken kharcho recipe products are in front of you.
  2. Prepare chicken (preferably fatty) – wash, remove entrails. Prepared chicken is cut into pieces.
  3. The chicken is placed in a saucepan.
  4. Then fill it with water and cook. Bring to a boil, then reduce heat, cover and simmer at a low boil.
  5. Peel, wash and finely chop onions.
  6. The still not quite soft chicken, after about 45 minutes, is removed from the broth and some of the fat is removed from it (if desired). The broth is set aside. The chicken is transferred to a cauldron or frying pan. The onion is placed along with the chicken. And covered with a lid, stew on low heat for 10-15 minutes.
  7. Dry the flour in a dry frying pan over medium heat (about 2-3 minutes), stirring occasionally.
  8. Then, while stirring, add the dried flour and continue to simmer for another 7-10 minutes on low heat.
  9. Cut the tomatoes into 4 pieces with the skin. Boil fresh tomatoes in a little water (10-15 minutes or until soft).
  10. Then the tomatoes are rubbed through a sieve (the skins will remain in the sieve).
  11. Grind walnut kernels, garlic, pepper, cinnamon in a mortar, adding warm broth. To make things easier, you can use a blender.
  12. Greens are washed and cut.
  13. The broth is heated, chicken stewed with onions is put in it, boiled for 10 minutes, after which mashed tomatoes, crushed nuts with garlic and spices are added. Season the kharcho with salt, bay leaf, cilantro and boil the chicken kharcho for another 10 minutes.
  14. Chicken kharcho soup is ready.
