Chicken Liver Salad with Carrots, Celery and Cheese

Chicken liver, carrots, celery, and cheese salad is prepared very quickly with affordable and inexpensive ingredients. If you want something unusual, then this recipe will definitely suit your taste. The fried chicken liver goes well with fresh vegetables and a sauce based on boiled yolks and mayonnaise.

Ingredients

  • Chicken liver – 350 g
  • Celery root – 220 g
  • Carrots – 200 g
  • Hard cheese – 80 g
  • Eggs – 3 pcs.
  • Mayonnaise – 180 g
  • Mustard (ready-made seasoning) – 1 teaspoon
  • Garlic – 2-3 cloves
  • Vegetable oil – 2 tbsp
  • Salt to taste
  • Ground black pepper – to taste

Directions

  1. Wash the chicken liver well and pat dry with a paper towel. To make it easier to fry, cut it into halves. Cut off excess fat and blood vessels. Season with ground black pepper and salt.
  2. Heat vegetable oil in a skillet. Put the liver in hot oil. Fry over low heat for 4-5 minutes.
  3. Turn the pieces of the liver over. Continue frying in the same mode for another 4-5 minutes. Turn off the fire. Cover the skillet with a lid and let the liver sit for 5-8 minutes.
  4. Transfer the liver to a paper towel to absorb the excess oil. Cool to room temperature.
  5. Cut the liver into strips.
  6. Peel, wash, and pat dry celery root and carrots. Cut the celery and carrots into thin strips. For this purpose, I use a Korean carrot grater.
  7. Also, cut the hard cheese into thin strips or grate on a Korean carrot grater.
  8. Peel the eggs. Separate the whites from the yolks. Cut the whites into strips, grate the yolks on a fine grater.
  9. To prepare the dressing, place the grated yolks in a deep bowl. Add mayonnaise, mustard, salt, and ground black pepper. Stir. Adjust the amount of mayonnaise to your liking. Since there is quite a lot of salad mass, a sufficient amount of dressing is needed.
  10. Put the chicken liver, celery root, carrots, hard cheese, and egg whites in a deep salad bowl. Stir all ingredients.
  11. Add dressing. Stir. Try the salad and adjust the flavor to your liking.
