Chicken Salad Sandwiches

Recipe for making sandwiches with chicken salad, celery, green onions, grapes, mayonnaise and yogurt. This chicken salad can also be served on its own.

Servings: 6

Ingredients

  • Chicken – 1 Piece
  • Celery – 2-3 Pieces (stalks)
  • Green Onions – 3 Pieces
  • Mayonnaise – 1/2 Cup
  • Fresh Dill – 3 Pinches
  • Lemon juice – 1 Tbsp. the spoon
  • Brown sugar – 1 Tbsp the spoon
  • Salt – 1 To taste
  • Freshly ground black pepper – 1 To taste
  • Slices of bread – 12 Pieces

Directions

  1. Chop celery and onion. Cut the grapes in half. Chop the dill. Rinse the chicken and place in a large pot of water. Boil. Reduce heat and simmer until chicken is cooked (about 45 minutes).
  2. Remove the cooked chicken from the pan and place on a plate. Use your fingers or a fork to separate the meat from the bones, cut into small pieces and set aside.
  3. Place chopped celery, onions and grapes in a plate with chicken
  4. In another bowl, combine mayonnaise, yogurt (or sour cream), lemon juice, brown sugar, salt and pepper to taste.
  5. Add dill (additionally you can add marjoram, cilantro, etc. to your taste) and a pinch of cayenne pepper if desired.
  6. Pour chicken meat with celery, onions and grapes with the resulting mixture.
  7. Mix thoroughly. You can add a few pieces of bacon if you like. Put the salad in the refrigerator for a few hours or overnight.
  8. Place the chicken salad on the bread slices and top with the remaining slices. Or serve the salad separately.
