Chicken Soup with Broccoli, Cauliflower and Brussels Sprouts

Chicken soup with broccoli, cauliflower, and Brussels sprouts is a delicious and healthy soup that the whole family will love. Rich chicken broth, the benefits of vegetables and rice – it all comes together in one dish for your hearty lunch.

Ingredients
- Chicken thighs – 500 g
- Cauliflower – 300 g
- Brussels sprouts – 100 g
- Broccoli – 100 g
- Rice (a mixture of brown long grain and red) – 150 g
- or long-grain rice – 150 g
- Fresh chili pepper – 10 g
- Fresh parsley – 7-10 g
- Bulb onions – 1 pc.
- Bay leaf – 1 pc.
- Ground turmeric – ½ teaspoon
- Ground black pepper – 1 pinch
- Ground red hot pepper – 1 pinch
- Salt to taste
Directions
- We wash the chicken thighs, remove the skin. We spread the thighs in a saucepan, pour 2.5 liters of water, and put on heat. Bring to a boil and remove the foam with a slotted spoon. Cook the broth over low heat for 30-35 minutes. We wash the rice.
- Remove the boiled chicken from the pan. Strain the broth and return to the pan. Put the washed rice in the broth and cook for 10-15 minutes.
- We wash three types of cabbage and disassemble them into inflorescences, Brussels sprouts can be cut in half. Peel the onion and finely chop the chili pepper.
- Put three types of cabbage, onion, chili, and bay leaf in a saucepan. Cook for 10 minutes. Remove the chicken meat from the bones and disassemble it into fibers or chop it randomly. Chop the parsley.
- We spread chicken meat into the soup, add parsley, salt, turmeric, ground black, and red peppers. Cook for another 5 minutes. Before serving, remove the whole onion and bay leaf from the pan.
- Chicken soup with broccoli, Brussels sprouts and cauliflower is ready.
