Chicken Tortellini Soup

This is a healthy and light meal every night of the week.
Ingredients
- Chicken
- Bow
- Celery.
- Carrot.
- Chicken bouillon. Make your own or buy your favourite brand.
- Thyme.
- Laurel
- Tortellini cheese.
Directions
- First heat some olive oil in the bottom of a large boiler or saucepan. Saute the onions, celery and carrots over medium heat until smooth.
- Add broth, chicken breasts, thyme, and bay leaf and bring soup to a boil, then reduce heat to a simmer and simmer until chicken is well cooked. Remove chicken and chop with two forks.
- Add tortellini and simmer until tender. Then add the shredded chicken back to the soup and reheat. Remove the bay leaf and season to taste with salt and pepper.
