Chicken with Asparagus and Coconut-Peanut Sauce

Recipe for fried chicken breasts with onions, asparagus, and peanut butter, coconut milk, curry, lime juice, soy sauce, cayenne pepper, and cinnamon sauce.

Ingredients

  • Coconut Milk – 1/2 Cup (sauce)
  • Thai Curry Paste – 1 Tbsp. spoon (sauce)
  • Lime juice – 1 tablespoon. spoon (sauce)
  • Soy sauce – 1 tablespoon. spoon (sauce)
  • Fish sauce – 2 Tbsp. spoons (sauce)
  • Sesame oil – 2 Teaspoons (sauce)
  • Stevia Powder – 1 Pinch (sauce)
  • Black pepper – 1 Pinch (sauce)
  • Cayenne Pepper – 1 Pinch (sauce)
  • Cinnamon – 1 Pinch (sauce)
  • Coconut Oil – 1 Teaspoon
  • Garlic – 3 Cloves
  • Chicken Breasts – 900 Grams

Directions

  1. Prepare the sauce. In a medium bowl, beat peanut butter, coconut milk, curry paste, lime juice, soy sauce, fish sauce, sesame oil, stevia powder, black pepper, cayenne pepper, and cinnamon. If you wish, you can add some ingredients in more or less quantity, depending on your preference and how you want to get the sauce in the end.
  2. Heat coconut oil in a large skillet over medium-high heat. Add the diced onion and chopped garlic and fry until tender.
  3. Add the diced chicken and cook until golden brown, stirring occasionally for about 10 minutes.
  4. Add chopped asparagus, or you can add it at the very end if you want it raw.
  5. Add cooked coconut and peanut sauce to the chicken and stir. Partially cover and simmer for about 5 minutes, until aroma appears.
  6. Serve the chicken with a side dish of your choice: coriander, toasted nuts, green onions, unsweetened toasted coconut.
