Chocolate Cake with Cranberries

Such a delicious cake with healthy vitamin cranberries perfectly corrects melancholic mood. Moreover, it is very light – no fat dough and sour cream cream. The taste of chocolate biscuit, sour berries and sour cream with vanilla are very well combined.

Ingredients

  • Eggs – 5 pcs.
  • Sugar – 5 tbsp + cranberry sugar (to taste)
  • Flour – 4 tbsp (with a slide)
  • Cocoa powder – 2 tbsp
  • Fresh cranberries – 1.5 cups

For the cream:

  • Fat sour cream (or cream) – 300 g
  • Powdered sugar – to taste
  • Vanilla – to taste

Directions

  1. Beat the eggs with a mixer for 5 minutes.
  2. Without turning off the mixer, add sugar in portions (1 tablespoon. L.). Beat eggs until 3-4 times larger (total time 15-20 minutes).
  3. Preheat the oven to 175-180 degrees.
  4. Sprinkle the cranberries with sugar.
  5. Stir in the sifted flour and cocoa powder.
  6. Gently and slowly whisk the dry mixture into the beaten eggs. The dough should be smooth and fluffy.
  7. Place dough in a greased pan (with removable sides). Bake in the oven for 30-40 minutes (do not open the oven, otherwise the biscuit will settle). Readiness can be checked with a wooden stick (it must be dry).
  8. Whisk the sour cream for 1-2 minutes. Add powdered sugar and vanillin. Whisk until creamy.
  9. Cranberries can be crushed or the berries can be left intact.
  10. Cut the finished biscuit into cakes (the number of cakes is optional). Place cranberries and sour cream on each crust. Decorate the finished cake with cream and cranberries.
  11. It is advisable to wait until the cake is soaked and put it in the refrigerator until the next day.
    But, if you really want to, you can eat the cake right away.
