Chocolate Roll with Curd-Banana Filling (no Flour and Sugar)

Chocolate roll with soft cottage cheese and banana filling is prepared without flour and sugar. Banana chunks and honey add sweetness and mouth-watering flavor to baked goods. The basis for this roll is a biscuit cake, which is prepared not with flour, but with cornstarch. For a chocolate flavor, cocoa powder is added to it, and baking powder is added to maintain splendor. Chocolate roll without flour and sugar turns out to be soft and very tender. It will appeal to those who follow their figure, as well as to all other sweet teeth.

Ingredients

  • Cottage cheese (soft) – 320 g
  • Bananas – 230 g (peeled weight)
  • Eggs – 4 pcs.
  • Honey – 1-2 tbsp
  • Corn starch – 30 g (1 tablespoon)
  • Cocoa powder – 15 g (1 tablespoon)
  • Baking powder – 0.5 teaspoon
  • Butter – 20 g (for greasing the baking sheet)

For decoration (optional):

  • Coconut flakes or powdered sugar – to taste

Directions

  1. We prepare the necessary products.
  2. Separate the yolks from the proteins. For a roll, you need four egg whites and two yolks.
    We turn on the oven and heat it to 180 degrees.
  3. Beat egg whites with a mixer until firm peaks.
  4. One at a time, without ceasing to beat the egg mass, we introduce the yolks into the whites.
  5. Beat the whites with the yolks for about three minutes, until smooth.
  6. Combine starch, cocoa, and baking powder.
  7. Stir them until smooth. For greater softness and airiness of the roll, the mixture can be additionally sieved.
  8. Add cocoa with starch and baking powder to the beaten eggs.
  9. Mix everything with a wooden spatula with gentle movements from bottom to top. Stir carefully, but try to make the dough homogeneous, without lumps.
  10. Cover the baking sheet with parchment. Grease the parchment well with butter. Spread the dough on the parchment in a layer of about 1 cm and level.
  11. We place the baking sheet in a preheated oven for 15 minutes.
    We take out the finished cake from the oven.
  12. While the cake is still hot, separate the parchment.
    We spread the cake with the inner side up and let it cool completely.
  13. Peel the banana and cut it into small pieces.
  14. We combine cottage cheese, banana, and honey.
  15. Stir the mass until smooth.
  16. Apply the curd-banana mass to the cake.
  17. We fold the cake into a roll carefully, as the cake is fragile and may crack a little.
  18. Put the finished chocolate roll with cottage cheese and bananas in the refrigerator for 1-2 hours, then serve. Optionally, you can decorate the roll with coconut or powdered sugar.
