Ingredients

  • 100 g spiced speculoos
  • 3 tablespoon butter
  • 2 tablespoon sugar, brown
  • 1 large apple
  • 1 lemon (s), untreated, juice and zest it
  • 250 g quark
  • 250 g cream cheese
  • 190 g suar, brown
  • 3 egg (s)
  • 1 vanilla pod, which the pulp
  • 1 teaspoon cinnamon powder
  • 200 g sour cream or creme fraîche
  • 2 tablespoon powdered sugar
  • 0.5 teaspoon ½ cinnamon powder

Instructions

  1. For the bottom, preheat the oven to 170 ° C (top / bottom heat). Line the bottom of an 18 or 20 springform pan with baking paper.
  2. Put the biscuits in a freezer bag and work them into small crumbs with a rolling pin. Melt the butter in a saucepan, add 2 tablespoons of the brown sugar and mix the biscuits with the butter well, put them in the baking pan and press down well. Bake for about 15 minutes and then let cool down.
  3. For the filling, peel the apple, cut into small pieces, drizzle with lemon juice and mix with the zest of the lemon.
  4. Mix the quark and cream cheese with 190 g sugar and eggs to a creamy mass. Fold in 1 teaspoon of cinnamon, vanilla pulp and the apple pieces. Put the filling on the base and bake at 160 ° C (top / bottom heat) for about 75 minutes.
  5. Then let the cake cool in the slightly open oven for about 15-20 minutes. Then let the cheesecake steep in the refrigerator overnight and only then make the topping.
  6. Mix the sour cream, powdered sugar and cinnamon well and spread on the cake. Mix some brown sugar with a little cinnamon and add a decoration to the sour cream.
  7. It`s a great cake that we like to eat as a dessert at Christmas.
