Coffee and Сurd Сheesecake

A coffee cheesecake recipe for lovers of healthy sweets. Curd cheesecake with coffee prepared according to this recipe is a very delicate dessert.

Cook: 3 hours 30 mins

Servings: 10

Ingredients

For the base:

  • Little cookies (sugar) – 250 g
  • Butter – 150-200 g
  • Sugar – 2-3 tbsp

For curd crust:

  • Cottage cheese – 350-400 g
  • Sour cream – 250 g
  • Cognac – 3 tbsp
    or Liqueur Baileys – 3 tbsp
  • Sugar – 2-3 tbsp
  • Vanilla sugar – 1 teaspoon
  • Instant coffee – 2 teaspoon

For decoration:

  • Black chocolate – 50 g
  • Powdered sugar (optional) – 1 tbsp

Directions

  1. Grind the cookies into crumbs.
  2. Melt the butter.
  3. Stir in sugar and crushed cookies.
  4. Cover the form with baking paper.
  5. Place the loose dough on the bottom of a mold with a diameter of 25 cm and tamp it.
  6. Put the mold in the refrigerator for 15-30 minutes.
  7. Rub cottage cheese (or grind thoroughly with a blender).
  8. To boil water. Pour coffee with a minimum amount of water (1 tablespoon).
  9. Add sour cream, sugar, vanilla sugar, cognac, coffee to the curd.
  10. Beat all the ingredients for the filling (10 minutes) and put on the “dough”.
  11. Align thoroughly. Chill in the refrigerator for at least 2 hours.
  12. Grate chocolate on a coarse grater.
  13. Then sprinkle the cake with chopped chocolate. (Sprinkle with powdered sugar if desired.)
  14. Put the dessert in the freezer for 30-60 minutes (the curd cake should “grasp” slightly, and not freeze with a stone).
