Ingredients

  • 250 g pearl barley, medium or coarse
  • 1 medium onion (s), diced
  • 500 g minced beef
  • 2 large carrots, cut into small pieces
  • 2 leeks, cut into thin rings
  • 1 can corn
  • 1 can tomato (s), chunky
  • 200 ml broth
  • salt and pepper
  • some parsley, finely chopped

Instructions

  1. Boil the pearl barley in plenty of salted water for 20 minutes. Pour onto a sieve and rinse thoroughly with cold water.
  2. In the meantime, fry the minced meat until it is brown and crumbly. Add the onions, carrots and leeks one after the other and fry for about 5 minutes. Season well with salt and pepper and deglaze with the broth and tomatoes. Continue simmering until the vegetables are soft.
  3. Stir in the corn and pearl barley and let simmer for a few more minutes. When everything is really hot, season to taste again. Serve sprinkled with parsley.
