Cottage Cheese Casserole with Noodles and Nuts

An excellent breakfast dish is a cottage cheese casserole with noodles and walnuts. The zest of orange and lemon gives the casserole a bright aroma. Curd-vermicelli casserole is not only a tasty and healthy dish, but it is also an excellent way to “utilize” pasta leftover from the previous meal)

Ingredients

  • Vermicelli – 100 g
  • Cottage cheese – 200 g
  • Eggs – 2 pcs.
  • Sugar – 30 g
  • Walnuts – 15 g
  • Butter – 1 tbsp + for greasing the mold
  • Lemon – 0.5 pcs.
  • Orange – 0.5 pcs.
  • Salt to taste
  • Water (for boiling vermicelli) – 400 ml

Directions

  1. Prepare the ingredients you need to make your noodle cottage cheese casserole.
  2. Boil the vermicelli until cooked in salted water or use the vermicelli that was previously cooked but not eaten. Throw the vermicelli in a colander, let the water drain. If you are afraid that the vermicelli may stick together, rinse it with a little clean water.
  3. While the water is dripping from the noodles, mash the curd, sugar, egg yolks, and melted butter in a bowl with a fork. Add vermicelli to the curd mass.
  4. Grate lemon and orange zest on a fine grater and add to cottage cheese with noodles. If desired, the zest can be replaced with candied citrus fruits. Chop the walnuts with a knife into large crumbs and add to the curd mass.
  5. Beat the egg whites separately until they are firm, transfer them to the bowl with the previously combined ingredients. Stir.
  6. Grease a baking dish with butter or line the bottom with parchment. Put the curd-noodle mass into the prepared form, smooth the surface.
  7. Cook the cottage cheese casserole with noodles and nuts in an oven preheated to 180 degrees, about 25 minutes, until golden brown.
  8. Serve the cottage cheese-noodle casserole, cut into portions, warm. The casserole made from cottage cheese and noodles is not too sweet, for those with a sweet tooth, you can additionally sprinkle it with powdered sugar or pour over condensed milk.
