Ingredients

  • 500 g couscous
  • 1 kg lamb
  • 2 large onions, diced
  • 2 leeks
  • 4 tomato (s), eighthed
  • 1 tablespoon tomato paste
  • 250 g chickpeas, cooked
  • 3 zucchini
  • 3 artichoke (s)
  • 2 chilli pepper (s)
  • 350 ml vegetable stock
  • oil
  • salt and pepper

Instructions

  1. Cut the meat into cubes, salt and fry in oil, remove, cut the onion and leek and fry in the roast residue, add tomato paste and eighthed tomatoes, fry briefly and then add the soup, add the meat again and cook on a low flame for about 30 minutes, tomato skins remove and add chickpeas, sliced zucchini and quartered artichokes and sliced chili peppers and sauté for another 30 minutes, top up with a little hot soup if necessary, season with salt and pepper.
  2. Prepare the couscous according to the package insert.
