Couscous with Zucchini, Green Beans and Oyster Mushrooms

Neutral couscous goes well with oyster mushrooms, green beans, zucchini, carrots, and onions. The dish turns out to be very tender, juicy, and aromatic.

Ingredients

  • Couscous – 225 g (1 glass of 250 ml)
  • Zucchini – 380 g (1 pc.)
  • Green beans (fresh or frozen) – 300 g
  • Oyster mushrooms – 470 g
  • Bulb onions – 100 g (1 pc.)
  • Carrots – 100 g (1 pc.)
  • Salt – 0.5 teaspoon
  • Ground black pepper – on the tip of a knife
  • Vegetable oil – 2 tbsp

Directions

  1. We prepare products according to the list. Out of season, green beans can be used frozen, you do not need to defrost them.
  2. Rinse the green beans, cut off the ends on both sides. Cut the beans into pieces about 2-3 cm long. Dip the beans in boiling water and after boiling, cook for 3-4 minutes.
    Then put the beans in a colander, rinse with ice water and let the water drain.
  3. While the beans are cooking, peel the onions, rinse and cut into small cubes. Heat the vegetable oil in a skillet, add the chopped onions. While stirring, fry over medium heat for 2-3 minutes, until translucent.
  4. Peel the carrots, rinse and cut into thin strips. Add carrots to onions and fry for a couple of minutes.
  5. Rinse the zucchini, cut off the ends on both sides. If the zucchini is young, you may not need to cut the skin off; cut the zucchini into strips and place in a skillet. While stirring, fry for 5-6 minutes.
  6. Rinse the oyster mushrooms, remove the dense root part. Cut the oyster mushrooms into small pieces and add to the vegetables.
  7. Stirring, fry for 5-6 minutes. Boil water in any way. Put the couscous in a deep container, pour boiling water (500 ml), cover, and let stand for 5-7 minutes.
  8. Place the beans in the skillet with the rest of the food.
  9. While stirring, fry everything together for another 5-6 minutes.
  10. Fluff the finished couscous with a fork and place in the skillet. Add salt, black pepper, stir the contents of the pan, and heat for 1-2 minutes.
  11. Serve the finished dish hot immediately after cooking.
